Central Dalmatia is one of Croatia's regions that takes great pride in the quality and diversity
of dishes typically served on its islands and in coastal areas, as well as in the continental part, called Zagora. The meat dishes and seafood specialties are usually grilled, enriched with indigenous spices and flavours, and have very particular taste and appearance. This wealth, served on tables in our restaurants, became much more than a gastronomic delight - a recognizable and remarkable ingredient in our tourist offer. For all these reasons, a panel of experts have made an attempt at determining what catering establishments have earned, based on quality and originality of their offer, the right to be presented in this first ever "Central Dalmatia Gastronomic Guide". After giving points to restaurants and taverns based on a series of specific categories, ranging from 0 to 20 per category, we have decided to include in this Guide those that scored a total of more than 75 points for food and beverages, with special regard to selection of wines, as well as ambience, appearance and interior decoration, service and hospitality, and appearance and functionality of sanitary facilities.
With taverns, we have given particular consideration to authenticity and hominess of the atmosphere, the fire-place and the selection of traditional dishes and wines.
Based on their total scores, we have selected top ten restaurants and
six taverns and marked them as "Top 2004”, and among them we have selected the best restaurant and the best tavern for this year. We are confident that each new edition of “Central Dalmatia Gastronomic Guide” will include new locations, including those recommended by you as well, but we also hope that this Guide will motivate the owners to further improve their establishments and gastronomic offers, to the benefit of the guests and all of us.
